One of the hardest parts of running a coffee shop right now?

Raising your prices.

Not because the numbers don’t make sense. They do. Coffee’s more expensive, milk’s more expensive, wages are higher (as they should be), and everything from rent to electricity seems to be climbing year on year.

The hard bit is the guilt. That lingering voice in your head asking, “Will people still come?” or worse, “Am I being greedy?”

But here’s the truth: if you’re running an independent coffee shop that pours great coffee, pays people properly, and creates a place people love, your flat white probably isn’t expensive enough.

Let’s Talk About Costs

At Kickback Coffee, we roast coffee that we care about. We work directly with farmers who put just as much care into their crops as we put into each cup. The milk we use isn’t the cheapest on the shelf and when you’re ordering your oat, you’ll know it’s basically liquid gold.

But the cost doesn’t stop with ingredients. There’s the team behind the bar, trained to know their way around an espresso machine and a conversation. There’s the rent, the insurance, the machines, the maintenance. There’s the playlist that makes the space feel right. There’s the time, effort, and care that goes into creating something better than the norm.

So no, this isn’t about profit margins. It’s about running a business that’s built to last, built to survive and one that doesn’t cut corners, doesn’t exploit people, and doesn’t race to the bottom.

Price is a Statement

When we raise our prices, we’re not just covering rising costs. We’re making a statement.

We believe our product is worth it. We believe our team deserves it. And we believe our customers value the full experience and not just what’s in the cup.

We’re not trying to win a price war. We’re trying to build something people remember.

Don’t Compare Us to Costa

There’s a myth that independents should be cheaper than the big chains.

Why?

You wouldn’t walk into a Michelin-starred restaurant, enjoy incredible food and a curated service, and say, “Wow, this was amazing… but why isn’t it cheaper than Nando’s?”

And yet, that’s what independents deal with daily. Held up against corporations who operate at scale, control mass marketing and compromise on quality. But we’re not in the same lane.

We don’t have to be. We’re offering something entirely different. Something better.

How to Raise Prices Without Losing Your Nerve

If you’re still reading this, here’s our take:

  • Lean into a price increase, double down on your attention to detail. Your customers will see it.
  • Back yourself. If your coffee's excellent and your team is proud, people will pay.
  • Celebrate your values. Shout about your supply chain. Share the stories behind the bar.
  • And most of all, stop apologising for doing things properly.

Confidence is contagious. If you believe in what you do, your community will too.

A Flat White Worth Paying For

At Kickback, we don’t aim to be the cheapest coffee in town. We aim to be the one you come back to. The one you tell people about. The one that reminds you why you started drinking specialty coffee in the first place.

So here’s our ask: when you're thinking about raising your prices, don’t feel bad. Do it with purpose. And make sure your coffee, your team, and your experience back it up.

Because in the end, people don’t remember what they paid. They remember how you made them feel.
