Flavour

This coffee has been through a washed process. Once the cherries are ripened for processing they are floated in water to separate the fruits. The higher the density, the higher the quality of coffee and the less mature cherries will float to the surface so they can be easily removed. They are then hand sorted, pulped and fermented for a full 24 hours. Once fermented, the coffee is washed again and left to dry on raised beds for between 12-20 days. This careful processing and dedication to quality has given this delicious coffee tasting notes of chocolate and apricot.

The producers

This delightful coffee has been through a fully washed process at the Raimutin wet mill which serves as a central hub for farmers processing their coffee in this region. This mill plays a pivotal role in supporting farmers within the region to increase their skills when growing speciality coffee. They offer training courses on cultivation, picking and processing.

Timor-Leste is currently the worlds youngest country, only gaining sovereignty in 2002. The country is fast developing its agricultural sector and coffee is playing an important role in this. Coffee is the second highest earner for the country after oil and 37% of households in the country depend on coffee for income.
