Maria's farm, T'Zun Witz, is located in the town of Concepcion Huista in the Huehuetenango region of Guatemala. This is a culturally diverse region where 75% of the population are members of several indigenous communities. Maria is a member of the Jakaltek people, whose native language is Popti, which is only spoken by 60,000 people.
Each season a small artisanal wet mill is installed on Maria's farm, to be able to transform the mature coffee cherries into clean and dry parchment coffee. The process begins with the picking of ripe coffee at its peak point, then it is pulped the same day. Before pulping they take care to store the cherries in the shade, this way they prevent accelerating the fermentation process.
